The African egg plant casserole is one of my favorite lunch combo. It’s a great choice for the weekend cheat meal. Though it is a combination of vegetables rich in nutrients, the manner of cooking makes it slightly high in calories but the calorie value can never be as high as the western egg plant caserole.
- 1 large egg plant
- 2 large tomatoes
- 1kg of meat/fish
- 1 head of cauliflower ·
- 1 onion 1 cup of cut carrots and green beans
- Chopped parsley and celery
- 1/2 lit of vegetable oil,
- magi and salt
- Boil water and pour over vegetables and allow for 5 minutes. Strain and keep aside.
- Boil Goat meat in spice until tenderized.
- Pour vegetable oil in a hot pot, now add chopped tomatoes and onions and fry until soft.
- Add the cooked goat meat and continue frying for 2 minutes.
- Add your egg plant, and cauliflower. Put in some stock from goat meat if mixture is dry, or as desired.
- Now put in carrots and green beans and add a some salt and magi as desired. Allow for another 25minutes.
- Serve hot with white yams.
